Today we walked over to the Union Square Greenmarket to check out Emu eggs. We had always had a desire to make a omelette with ostrich eggs (Flinstone style!). After seeing a delightful recipe for Wylie Dufresne’s Emu-Egg Fondue in New York Magazine, we were intrigued! Turns out, ostrich eggs are not in season and the market is only selling the shells. Emu eggs are available! Has anyone tried this recipe?
